Baked Spanish Cod
Sorry Fellers,Rushy opened a can O worms as this Ol tart""yours truly"" does enjoy cooking the odd fish related recipe ,I blame er indoors as she refuses to work a 10 hour day and then come home and cook me tea,so I've kinda been lumbered and have started to enjoy it.
Giss a shout on what your fav fish are and if I've cooked it and eaten it Ill try and dig out a recipe hiding on me hard drive somewhere......
Easy one pot meal .
Ingredients
cod fillet
2 red peppers deseeded and chopped
2 red onions cut into wedges
250g of cherry tomatoes
handful black pitted olives
400g tin of butter beans
680g jar of passata
button mushrooms
fresh basil
salt&pepper
Tsp of Sweet Paprika
heat oven to 200 Degrees
place peppers,onions,tomatoes,olives,and butter beans into a deep cooking dish,put into oven for 15 mins to char and soften veggies.
season cod fillet and cut into required pieces.
after 15 mins stir in the passata and Paprika and add mushrooms then lay cod fillets under sauce,rip basil and add to dish...season to taste.
reduce oven temp to 170 Degrees and cook for further 20 mins.
while the fish is cooking boil some tatters and get the ricer bizzy and add some butter and beat the hell out of it to a soft whip.
serve in big bowl.
You can also add Chorizo sausage pieces for a spicier flavour.

That looks really good thought I would show it to the wife after she read it she looked,me in the eye and said " NO YOUR NOT GOING BLOODY SPAIN TO CATCH ONE OF THEIR FISH " not.like her to be nearly funny will give it a try next cod caught

Hope you enjoy it Marc,if you get hold of any try it with Pollock mate,firmer texture but just as tasty.
