Baked Hake with Red Pepper Relish & Spring Onion Mash

Ok you won't find it on your traditional catch list but nothing wrong in finding fish that are tasty to cook and eat from your wet fish man,I guess its half way between Cod and Pollock for taste with dense flakes but a meaty texture.........

Simply baking the fillets with just a squeeze of Lemon and some seasoning allows you to add
flavoured sides and some tasty mash for a full on meal !!!!!!!!!

INGREDIENTS

Fillet of Hake cut into generous portions
Rock Salt.
Spray Cooking Oil
Fresh Lemons sliced

Red Pepper Relish ingredients.....

3 or 4 Red /Green Peppers....sliced thin
1 whole Red Onion...sliced thin
1 Fennel Bulb ...Sliced thin
1 Red Chilli ....sliced thin
2 Garlic Cloves ...sliced thin
1 Bay Leaf
2 Sprigs of Fresh Thyme or 1/2 tsp Dried

extra ingredients..............

1/2 tsp sweet smoked Paprika
1 tbsp. Balsamic Vinegar
1 tbsp Runny Honey
season to taste.

Spring Onion Mash

2 lbs Maris Piper Spuds or similar peeled and cut into chunks
2oz Butter
1 Bunch of Spring onions trimmed and sliced thin
drop of milk
seasoning

Assemble your Ingredients

Prep the Peppers,Onion,Fennel Bulb,Garlic

Ok lets get cracking ....................

Cover the hake fillets with rock salt and set aside for 15 minutes. Rinse in cold water, pat dry and set aside. This process imparts an even salt flavour to the whole fillet of fish as opposed to just the outside of the protein .....once done.slice some Lemons and lay in your dish.Top with the fillets and lay some more lemon slices,quick spray of oil and season well......

For the red pepper relish, put 5 tbsp of olive oil in a pan with the pepper, fennel, onion, garlic, chilli, thyme, bay leaf and a pinch of salt. Cook for 15 minutes on a low heat until soft, stirring from time to time ............... Add the paprika, honey and balsamic vinegar and cook until reduced by a third. Season and leave to gently simmer on a low heat while you cook the fish and finish the mash

Oh and the Red Pepper Relish works really well with Burgers and Sausages.........

180 degrees in a fan oven for around 10 to 12 mins should see your Hake fillets beautifully cooked through

As your Relish is bubbling in the pan for 15 to 20 mins you can boil drain and mash your potatoes,add some butter and the sliced Spring onions and bind together,loosen with a drop of milk if the mix is too firm,check the seasoning............and set aside to serve.

Serve a healthy portion of each on your plate.................

The Hake is juicy and firm fleshed and a definite Winner for a cold Winters fish Dinner !!!!!!!!

Nice one Gazza,like the look of the red pepper relish mate,especially with the honey added.
Will save this one for the barbie season n burgers :thumb:
