Freezing Yellow Tails

Been looking at filling my freezer for next winter as I got caught short last year and had to fork out for blacks as I could not pump them. Managed 200 Big yellow tails the other day and after speaking to a lad about how to freeze them he advised just sticking a baiting needle through the head and rolling in paper. I did as I was advised but I am not overly happy with them (they will be fine for Dab bait) I plan on gutting them like conventional blacks and rolling in cellophane. What is the best way to dry gutted worms? Just leave on newspaper for a few hours or use some dry sand or sawdust? Some blacks I've had in the past were coated in sawdust and these were fine.
